We had a Relief Society freezer meal class awhile ago. It was wonderful to have meals in the freezer when you really didn't feel like cooking. You just need to pull your meal out of the freezer,
let it defrost then cook and serve. Easy as 1,2,3!
So here's a few that I really liked.
- Taco Soup
Add together:
Four cooked chicken breasts, shredded
4 cans chicken broth
4 cans beef broth
1 can diced tomatoes
1 can corn drained
1/2 cup chopped cilantro
2 cans kidney or pinto beans
1 can green chilies
1 tsp. chili powder
1 tsp. cumin
2 tsp. crushed garlic
1/2 onion, chopped
Put in freezer container. Freeze. Thaw. Heat for 30 to 40 minutes. Simmer. Serve with Tortilla chips, shredded cheese, lime, avocado and sour cream if you wish.
ENJOY!
- Creamed Tacos
1 pound hamburger, browned
1 can tomato soup
1 can mushroom soup
1 can diced green chilies
1 half bag of Nacho flavored Doritos
2 cups grated cheese
Cook, drain hamburger. Mix soups, and crushed doritos into hamburger (mixture should be moist...if not...add a little water).
Put into foil pan and cover with grated cheese. Cover with foil ( no air pockets). Freeze. Later, thaw cook for 35 to 40 minutes at 350.
- Chicken Enchiladas
(these are pretty close to the same ones we have all made).
1/2 cup chopped onion
2 Tbl. butter
1 4 oz. can chopped green chilies
3 cups cooked chopped chicken
1 can evaporated milk
1 can cream of chicken soup
1 1/2 cups sour cream, 2 cups shredded Monteray Jack cheese
10 flour tortillas
Saute onionin butter until soft. Remove from heat. Stir in green chilies and chicken. In a bowl combine evaporated milk, soup and sour crea. Cut tortillas into squares with a pizza cutter. Set aside a little of the soup mixture for the topping. Add tortillas, chicken mixture, and remaining soup mixture all together. Top with remaining sauce. Cover with foil, label and freeze.
To serve: Thaw. Bake covered 60 minutes at 350.
Now with all of those m...m...good chicken meals here is a little desert to add.
- Frozen Berry Cobbler
5 to 6 cups of your favorite berries or a combination of berries
4 Tbl. sugar
3 tsp. cinnamon
1 cup oatmeal
1 cup brown sugar
1/2 cup flour
1/2 cup soft butter
Place berries in a 9x13 inch pan.
Mix the remaining ingredients together and sprinkle on top of berries.
Cover with foil and freeze. Bake at 350 degrees until mixture begins to bubble.
